Skewered Coffee Chicken Curry with Kamado Chili Sauce

You may have seen recipes where ground coffee is used as an ingredient in a spice mix (rub). The coffee adds a pleasant flavor, very full, with a bitter touch. In this recipe for chicken thighs, the combination of coffee with curry will have the same effect.

You can choose to leave the thighs whole and grill them after spreading the coffee and curry mixture over them; in this case, the preparation time will have to be extended a little to allow the meat to fully cook. You can measure its average temperature to reach at least 70 ° C.

Ingredients:

4 boneless chicken thighs.

4 tablespoons of curry powder.

4 tablespoons of ground coffee.

1 teaspoon of fine sea salt.

8 tablespoons sweet chili sauce.

 

Preparation:

  1. Light the charcoal in the Big Green Egg and heat it with the cast iron grill to 220 ° C.
  2. Meanwhile, cut the boneless chicken thighs into 2 cm cubes.
  3. Mix the curry powder with the coffee and salt, rub the chicken meat with the mixture and spread it on 12 small skewers.
  4. Put the chicken skewers on the rack of the Big Green Egg.
  5. Close the lid and grill for 4-5 minutes.
  6. Flip the chicken and grill for another 4-5 minutes until done.
  7. Remove the skewers from the rack and serve with the chili sauce.
